Chocolate Covered Tahini Date Bites Recipe

These chocolate covered tahini date balls are delish
And we think you should make them for your Valentine.
That doesn’t rhyme, but we can’t be perfect at everything!
With Valentine’s Day around the corner, and most of us exhausted by the same old same old of pandemic life, we thought we’d share a really simple recipe for treats that are as easy to make as they are delicious. Whether you’re looking for something special for a Valentine, friend, or just yourself, these chocolate covered tahini balls make the perfect pick-me-up or a wonderful way to say, “I think you’re sweet”. Make them as is or drizzle in some full-spectrum hemp extract for soothing treats that melt in your mouth.
Time: 1 hour
Yield: 20 balls
1/2 cup tahini
1/2 cup date paste (note: if you don't have date paste, you can use 1 cup of pitted dates - just throw them in the food processor with 2 tbsp water instead of the date paste)
1/4 cup almond flour
1/2 cup dark chocolate chips
1 tbsp coconut oil
flake sea salt
*Full-spectrum hemp extract (optional)
*To include full-spectrum hemp extract, slowly drizzle the hemp extract into the tahini while mixing constantly with a whisk. Mix until well blended. We suggest 5mg CBD per ball (so you can eat 2!), or 100mg CBD for the recipe (5mg x 20 balls = 100 mg CBD). See our notes below on how to figure out how much extract you need.
Combine tahini, date paste (or dates + water), and almond flour in a food processor. Mix until combined, mixture should be smooth and sticky. Transfer into a clean bowl, cover, and refrigerate for 1 hour.
Select a saucepan and a metal or Pyrex or other heat proof glass bowl that fit well together. Most of the bowl should fit in the saucepan without touching the bottom and be able to rest above the rim of the pan without having to be held in place and so water won't spill into the bowl. Fill saucepan with enough water so when you put the bowl in water won't spill over. Put saucepan with water and bowl over med-high heat. Put chocolate and coconut oil in the bowl. Bring water to a low simmer then lower heat, stirring often. Once chocolate is fully melted and smooth, lower heat to low.
Take tahini mix out of refrigerator. Forming a 1-inch ball with your hands. Using two spoons, spoon and small ladle, or whatever method works for you, dip tahini ball into the melted chocolate, ensuring it's evenly coated. Place on a parchment covered tray to cool. Repeat with remaining tahini mixture.
Cool remaining chocolate until it forms ribbons. Drizzle over chocolate covered tahini balls. Sprinkle flaked sea salt on each chocolate covered tahini ball (we used red Alaea sea salt and Hawaiian sea salt).
** Here’s how to figure out how much extract to use depending on the concentration of your extract:
- 1200mg CBD oil in 30 mL: there are 40 mg CBD in 1 mL of extract. So, you would need 2.5 mL extract, or two full droppers and then ½ dropper of extract to get 100 mg of total CBD for this recipe.
- 800mg CBD oil 30 mL: there are 26.6 mg CBD in 1 mL of extract. So, you would need 3.75 mL (or droppers full) of extract for the recipe.
- 500 mg CBD oil in 30 mL: there are 16.6 mg CBD in 1 mL of extract. You need 6 mL (or droppers full) extract for the recipe.
Most extracts come in 30 mL bottles, but if yours is different, just adjust the ratios by dividing the total mg CBD by the total volume of liquid in the bottle. Most droppers for 30mL bottles are 1mL. For tips on picking a full-spectrum hemp extract, check out our blog post.
