Job Summary: The Kitchen Manager is responsible for the menu and maintaining the restaurant's food vision and quality. This individual is a positive leader setting the tone of excellence with hard work and professionalism. Creates and manages systems to ensure consistent, excellent, and efficient work. Motivates and coaches staff and creates opportunities for them to grow. Manages food costs and labor to the budget. Ensures sanitation and cleanliness is of the highest standards.
Essential Duties and Responsibilities:
  • Ensuring the line runs smoothly and efficiently, including managing ticket times and quality of food.
  • Participate in the development and ongoing training needs as part of process improvement. Responsible for training new hires.
  • Managing staff morale during slow and busy times.
  • Familiar with all areas of the kitchen – line, prep, and bake.
  • Manage BOH staffing through 7 Shifts Software; manage kitchen labor based on the evaluation of the business.
  • Manage Kitchen Operations to meet specific metrics provided by the General Manager, including labor, food costs, and other operational expenses, and ensure adherence to budgeted targets; takes responsibility for explaining variances and implementing corrective action needed.
  • Maintain organization and cleanliness throughout all areas of the kitchen.
  • Organize inventory controls; complete ordering while maintaining proper costing goals.
  • Ensure and manage safe and proper food handling procedures/protocols.
  • Establish and conduct training/procedures.
  • Menu development with upper management.
  • Conduct inventory at the end of every month and submit within a timely fashion.
  • Back-up for the team, picking up and covering shifts when needed.
  • Perform other duties as assigned.
Education and/or Work Experience Requirements:
  • High School Diploma or GED
  • Must be 21 years of age or older and able to pass a comprehensive background check, in line with Company Policy
  • Have at least two years of Kitchen Management experience
  • Ability to develop/execute menus, catering menu/orders
  • Basic knowledge of Excel, Word & PowerPoint
  • Management/Leadership skills
  • Experience with food cost/cogs
